It’s over 100,000 tiny “guests” atop the roof, busy making honey and helping nearby gardens to thrive. Seasonally, a limited amount of honey is harvested from the rooftop apiaries and is featured at Solaire Restaurant + Bar. Ask your server to tell you about Chef Stefen’s latest dishes featuring local honey.
Our beekeeper, Emily Bondor, owner of Santa Cruz Bee Co., hosts educational bee talks and honey tastings at the hotel on a regular basis and can be available by advance appointment for group events.
